In our family, we learned to respect food. Nothing went wasted, we were very careful to use everything in the fridge before go buy supplies again.
That’s why our kind of cooking is creative and improvised. We check what we have at disposal and prepare lunch or dinner. That easy!
To be honest, sometimes it is a complete disaster, but we won’t share that ones with you, only our successes!
A piece of butternut, some spicy chorizo and a few chunk of cheese (parmesan and cheddar). That’s what I found in my fridge. What can I make with that? I add onions and garlic that I always have in my vegetable basket and decide for a savory pie.
Here the ingredients:
Butternut (or another kind of pumpkin)
Chorizo (or another spicy salami)
Parmesan or a similar kind of cheese
Onions
Garlic
For the dough:
180gr flour (wheal mais rice I love mixing them)
4 tablespoon of olive oil
A pinch of salt
Water as needed
I clean and peel the butternut and steam it. I fry 2-3 onions with a couple of cloves of garlic
I prepare a shortcrust pastry with the flour and 4 tablespoons of oil, add a little water to obtain the right consistency and let it rest, covered, for half an hour.
I roll out the dough on a cake tin, cover the bottom with the slices of chorizo, then a layer of onions and finally the butternut mashed with a potato masher, to which I added a little cream or yoghurt and spices to taste (I put ginger) ; finally I grate the remains of cheese and put it in the oven at 180 for 20 min.
I appreciate to eat it warm with a green salad. Buon appetito!
